Chymotrypsin facilitates the cleavage of peptide bonds by a hydrolysis reaction, which despite being thermodynamically favorable, occurs extremely slowly in the absence of a catalyst. It specifically targets the aromatic amino acids, tyrosine, phenylalanine, and tryptophan. Chymotrypsin has also seen some use in medicine, particularly in assisting cataract surgery.
